The vegetables for this recipe can be sliced and frozen to be ready for a quick and delicious meal.
2-3 boneless, skinless chicken breast halves
3 tbs Chicken Fajita Seasoning (I use Lisy brand)
1 green bell pepper, sliced
1/2 red bell pepper, sliced
1/2 orange bell pepper, sliced
1 onion, sliced
1 cup cheddar cheese, shredded
8 flour tortillas, warmed
Step by Step Instructions
- Filet each chicken breast half by placing on a cutting board and slicing through with a knife parallel to the cutting board.
- Put the seasoning in a ziplock bag and add the chicken fillets. Shake to coat.
- Heat a large skillet over medium-high heat. Saute chicken fillets on each side until cooked through. Remove from heat and slice.
- Add peppers and onions to the skillet, stirring to absorb all the spices and oil from the chicken breast. Cook for a few minutes until vegetables are heated through.
